Strawberry Fields

I hope everyone had a marvelous weekend! Among other things I went berry picking. 


20 pounds of berries later, we went home and became utter gluttons. Eating berries by the handful. There were strawberries on ice cream, yogurt,  and waffles. On cakes and in smoothies and shakes. Some made it into the freezer and jam. This was the only way not to break out in hives. I can't describe how wonderful it is to have enough berries to even contemplate getting sick of them, if not sick on them.






Strawberry Orange Spread  - recipe from Grandma Scott

2 pkg frozen strawberries -thawed (10oz each)  
1 pack powder pectin
1 orange rind grated
1/2 cup orange juice (1orange)
3 1/2 cups sugar

Mix berries,  pectin, orange in a 3 qt. pan. Heat and stir until rolling boil. Add sugar and bring to boil again - stir constantly. Remove from heat, pour into jars and seal or refrigerate.  

Makes about 4 1/2 pints

I grew up eating this on waffles and it's fabulous! However, no longer being 5 and with the invention of 'No Sugar Needed' pectin some adjustments were made.

2011 less sugar version

12 cups fresh Strawberries - hulled and mushed to desired consistency
2 packets No Sugar Pectin
2 cups orange juice
4 cups sugar  (my orange juice was puckery)
Processed as above for freezer jam.

Made 13 - 13oz jars 

It's still fabulous on everything from toast to ice cream!
